Pure,
Raw Honey
Just
as every flower has a different color and a different scent,
every flower has its own particular flavor of honey.
They vary from the very light water-white honey to the dark,
full-bodied honey, dependent upon the nectar flower source.
At Point Phillip our honey is a blend of wildflowers from
the area of the Blue Mountain. It is a medium, full-bodied
honey.
Another
important thing about our honey is that it is raw.
Always make sure that the label states raw honey.
It is always best to buy from a beekeeper to be sure. Commercial
honey is processed at high heat to prevent crystallization
and for ease of bottling. The flavor of the honey and
much of the nutritional value of honey is destroyed by heat.
If raw honey should crystallize just place it in a pan of
hot water to melt the crystals. It is not spoiled
- do not throw it away! Honey never spoils!
Why
is honey better for you than refined white sugar? Honey
contains two sugars, dextrose and levulose, which are pre-digested
and ready to enter the bloodstream immediately. Honey
is also free of bacteria and does not irritate the stomach.
In addition, honey contains many nutrients that the body needs.
It also provides us with a quick energy release. White
cane sugar and honey differ in every way. After processing,
white sugar contains nothing but empty calories and carbohydrates.
Everything else has been removed. Honey contains some
of every nutrient except Vitamin A.
Cooking
With Honey
The
following are suggestions for successful cooking with honey:
- Substitute
3/4 cup honey for 1 cup of sugar.
- Reduce
total liquid by 1/4 cup for every cup of honey used.
- Lower
baking temperatures 25 - 30 degrees.
- Foods
sweetened with honey have a better flavor the second day.
- To
eliminate sticking, coat measuring cups or spoons with
oil.
- To
neutralize honey's natural acidity, add 1/2 tsp. baking
soda, except when sour milk is used.
- Store
honey in a tightly closed container at room temperature.
Bee
Pollen - Nature's Energizer
Bee-gathered
pollen is a food supplement. It is high in proteins,
vitamins, minerals and enzymes. It contains all 22 essential
amino acids needed by our body. A teaspoon taken daily
helps increase your stamina and your energy level. It
will also help regulate intestinal functions and has a calming
effect. Pollen is high in rutin a natural muscle
relaxant that also helps reduce hypertension. Pollen
is low in sodium and in calories. Pollen from your own
geographical area can help reduce the effect of pollen-related
allergies ~ i.e. hay fever. This is based on the same
principle as allergy shots ~ a build-up of natural immunity.
Pollen should never be cooked. Sprinkle it raw on cereals,
salads, etc. or eat it plain or mixed with honey. Our
pollen is sun-dried so it will not spoil.

Royal
Jelly - Miracle of the Bees
Royal
jelly is another product of the bees that is used as a food
supplement. It is very high in pantothenic acid, one
of the B vitamins, that is a known stress reducer. It
also has plentiful amounts of other B vitamins as well as
A, C, D and E. It is also rich in minerals. Another
important component is acetycholine, which helps nerves function
properly. It also contains 8 of the essential amino
acids needed by humans. Another compound is present
that stimulates the sex glands. Last, but not least,
it has antibiotic and antibacterial properties. Another
wonder of nature and the amazing bee!
Since
royal jelly loses all of its beneficial properties at room
temperature, it must either be frozen or mixed with honey,
which acts as a preservative. The royal jelly that we
sell is mixed with honey to preserve all of its good qualities
and to make it more pleasant to eat. Pure royal jelly
is extremely bitter.

Propolis
- Hippocrates Used It
Propolis
is resin gathered by bees from the buds and barks of certain
trees to keep their colonies germ free. It is a naturally
occurring antibiotic. It is harvested from our hives
and chewed like gum to relieve sore throats, mouth cankers,
colds, stomach ulcers and various other ailments. Tinctures
can be made for topical applications.
